Bacon-Spinach Quiche (no crust)

INGREDIENTS

  • 6 eggs
  • 1 cup lowfat (2%) milk
  • 6 oz. Swiss or Gruyere cheese – shredded (or other favorite cheese)
  • 8 slices crisp bacon – crumbled
  • 1/2  cup chopped spinach
  • 1/8 tsp ground nutmeg
  • Salt and pepper

DIRECTIONS

  1. Preheat oven to 375°.
  2. Spray pie pan or quiche dish with nonstick cooking spray.
  3. Beat eggs in medium size bowl.
  4. Add milk to eggs. Beat together.
  5. Stir in remaining ingredients.
  6. Pour into baking dish.
  7. Bake 40-45 minutes, until toothpick inserted in center comes out clean.
  8. Let stand 5 minutes before cutting.

Options

Substitute asparagus, mushrooms, broccoli, or combination for bacon, or combine with bacon.
