INGREDIENTS
- 6 eggs
- 1 cup lowfat (2%) milk
- 6 oz. Swiss or Gruyere cheese – shredded (or other favorite cheese)
- 8 slices crisp bacon – crumbled
- 1/2 cup chopped spinach
- 1/8 tsp ground nutmeg
- Salt and pepper
DIRECTIONS
- Preheat oven to 375°.
- Spray pie pan or quiche dish with nonstick cooking spray.
- Beat eggs in medium size bowl.
- Add milk to eggs. Beat together.
- Stir in remaining ingredients.
- Pour into baking dish.
- Bake 40-45 minutes, until toothpick inserted in center comes out clean.
- Let stand 5 minutes before cutting.
Options
Substitute asparagus, mushrooms, broccoli, or combination for bacon, or combine with bacon.
