Ingredients
- 2 lbs. carrots – scrubbed (peeling not necessary)
- ¼ cup low-fat sour cream
- Salt and pepper to taste
Optional ingredients
- 1-2 potatoes cut up
- Ginger (or rosemary)
Directions
- Scrub carrots and cut into small pieces
- Steam carrots (and potatoes, if included) for 30 minutes (or until soft)
- Drain.
- Add salt, pepper, and sour cream.
- Mash or blend with food processor.
