Pureed Carrots

Ingredients

  • 2 lbs. carrots – scrubbed (peeling not necessary)
  • ¼ cup low-fat sour cream
  • Salt and pepper to taste

Optional ingredients

  • 1-2 potatoes cut up
  • Ginger (or rosemary)

Directions

  • Scrub carrots and cut into small pieces
  • Steam carrots (and potatoes, if included) for 30 minutes (or until soft)
  • Drain.
  • Add salt, pepper, and sour cream.
  • Mash or blend with food processor.
