Spinach Pie (microwave)

 

Spinach Pie 

Ingredients 

• 3 eggs
• ¾ c milk
• 2 c Stove Top Stuffing
• 10 oz frozen chopped spinach – thawed, drained
• ¾ c low fat cottage cheese
• 4 green onions, chopped
• ¼ tsp garlic powder
• 1/3 c shredded cheddar
• Olive oil spray (to coat baking dish)

 Directions 

1. Spray microwavable dish with oil.
2. Whisk eggs and milk in large bowl.
3. Add remaining ingredients (except cheddar).
4. Pour into 9-inch microwave pie dish.
5. Microwave 5-10 minutes – until center is set.
6. Sprinkle with cheddar cheese.
