* MICROWAVE

I got my first microwave oven in the late 1970’s.  I remember a friend had gotten one. I hadn’t even seen hers (or anyone’s) but I knew I had to have one.

 At that time, Consumer Reports magazine ran a piece about what consumers should know before purchasing a microwave oven. Their recommendation was to buy the largest capacity possible so that you could cook a turkey in it.

 A turkey? Really?  Notice that concept has not been very popular!

Microwaves are great for reheating leftovers. No argument there! But can they really cook? Yes they can!

 I love cooking in the microwave. I have had some wonderful successes that I now rely on for frequent meals. (We won’t talk about that batch of brownies that exploded in the microwave oven just recently! Oops!)

 Corn on the cob  

No husking needed. Just put the whole corn, husk and all, into the microwave and cook on high for 4 minutes. Two ears of corn – cook for 8 minutes, and so on. Then slice off the stem end and the corn on the cob slides right out.  The husk and the silk are cleanly separated. No fuss, no muss.  Perfect every time.

 Lasagna

Yes, in the microwave! Add a little spinach for extra color, texture, taste, and nutrition.   Check out my Spinach Lasagna recipe.

 Salmon Fillets

Place a salmon fillet in a microwave-safe bowl or dish and season or cover with your favorite sauce. Microwave for 5-8 minutes (covered), depending on quantity and the size of your microwave oven. I like to flake the salmon (quick and easy with just a fork) and include in a casserole. Curried Salmon Pasta receipe.
