Ingredients
- Fresh salmon fillet (1/4 lb per person)
- Angel hair pasta
- Arugula (it cooks down so add more than you think)
- 1 tbsp garlic
- salt – to taste
- 1 tbsp curry powder
- 1 tsp paprika
- 1/2 tsp lemon juice
- 1 tsp honey (approx)
- Olive Oil
Directions
- Boil water to get ready to cook the pasta.
- Season salmon fillet – generously – with salt, garlic, paprika, and curry powder. Lightly coat microwave dish with olive oil. Place seasoned salmon fillet in dish. Add 1/2 tsp (approx) lemon juice. Drizzle 1 tsp honey over fillet. Microwave for 5-7 minutes (until cooked through and flaky).
- Place washed arugula in microwave-safe dish. Season generously with additional salt, paprika, garlic, and curry powder. Spray lightly with olive oil. Add 1 tablespoon water. Cook 4-1/2 to 5 minutes.
- Add angel hair pasta to boiling water. Let boil for 4 minutes.
- Flake (or coarsely chop) cooked salmon. Combine all ingredients in serving bowl.

Microwave Cooking Tip: I like to cover food to be microwaved with waxed paper (cut to appropriate size). I saturate the waxed paper with water from the tap, wadding the waxed paper under the running water so as to hold a bit more water. Flatten waxed paper enough to cover microwave-ready dish. This adds just enough moisture to the cooking process.
